- Soak 1 cup of black chickpeas (kale chane) overnight or for at least 7–8 hours. They will expand and soften, making them easier to cook.
- Drain the soaking water and transfer the black chickpeas to a pressure cooker. Add salt (1 TSP), close the lid, and cook on high flame for 6–7 whistles until they are soft enough to be mashed easily.
- Drain and let them cool. Grind into a coarse, crumbly texture in a mixer-grinder without adding water.
- Transfer the ground black chickpeas to a mixing bowl and add 1 mashed potato, 1 finely chopped onion, coriander leaves, and a paste of garlic, ginger, and green chilies.
- Mix in the dry spices – cumin powder (½ TSP), coriander powder (1 TSP), garam masala powder (½ TSP), red chili powder (1 TSP), chaat masala or amchur (1½ TSP), black salt (½ TSP), and salt to taste.
- Add besan (3 TBSP), and mix well until everything binds well and the flavors are evenly distributed.
- Take small portions of the mixture and shape them into round or oval kebabs. Lightly grease your palms with oil if needed.
- Heat a pan and drizzle a little oil.
- Keeping the flame on medium, place the kebabs on the pan and cook for 4–5 minutes. Flip carefully to avoid breaking and cook the other side for the same duration.
- Continue flipping until both sides turn golden brown and crisp. Add more oil if needed.
- Gently press the kebabs or cover the pan to ensure they cook through.
- Once done, transfer to a paper towel to absorb excess oil.
