Instructions
- Firstly, prepare the batter.
- Take 1 cup of leftover rice (cooked) and mash it well in a bowl.
- Add 2 TBSP each of grated carrot, finely chopped onion, capsicum, green chilies, and coriander leaves.
- Mix in sesame seeds (1 TBSP), cumin seeds (½ TSP), ginger-garlic paste or powder (1 TSP), turmeric powder (¼ TSP), and salt to taste.
- Add 3 TBSP of flour (wheat or white) for binding.
- Gradually pour in 2–3 cups of water while stirring continuously to form a thick, soft batter with a slightly textured consistency.
- Heat a pan and grease it with oil or ghee.
- With flame on low, pour a ladleful of batter onto the pan. Since the batter is thick and textured, it won’t spread too thin—however, you can try adjusting the size, and shape as desired.
- Cover and cook for about 5 minutes, allowing it to set and develop a golden crust.
- Flip carefully, cover, and cook the other side for another few minutes.
- Continue flipping and gently pressing until both sides turn golden brown, crisp, and fully cooked.
- Remove from the pan and serve hot.
