Kale Chane Ke Kebab: Simple, Savory, and Satisfying

Golden and crispy on the outside, soft and hearty on the inside—Kale Chane Ke Kebab are a delicious way to enjoy the nutritional value of black chickpeas (kale chane). A vegetarian alternative to the traditional kebabs, they’re quite easy to prepare and bursting with earthy, smoky flavors.

Whether served as a snack, party appetizer, or side dish, these kebabs deliver on taste every time. Plus, they’re incredibly versatile—enjoy them with chutneys and dips, or use them as a patty in wraps and burgers.

Ingredients

  • Black chickpeas (kale chane)
  • Potato
  • Onion
  • Garlic
  • Ginger
  • Green chilies
  • Coriander leaves
  • Cumin powder
  • Coriander powder
  • Garam masala powder
  • Red chili powder
  • Chat masala powder/amchur (dry mango powder)
  • Salt
  • Besan (gram flour)
  • Oil

Instructions

  1. Soak 1 cup of black chickpeas (kale chane) overnight or for at least 7–8 hours. They will expand and soften, making them easier to cook.
  2. Drain the soaking water and transfer the black chickpeas to a pressure cooker. Add salt (1 TSP), close the lid, and cook on high flame for 6–7 whistles until they are soft enough to be mashed easily.
  3. Drain and let them cool. Grind into a coarse, crumbly texture in a mixer-grinder without adding water.
  4. Transfer the ground black chickpeas to a mixing bowl and add 1 mashed potato, 1 finely chopped onion, coriander leaves, and a paste of garlic, ginger, and green chilies.
  5. Mix in the dry spices – cumin powder (½ TSP), coriander powder (1 TSP), garam masala powder (½ TSP), red chili powder (1 TSP), chaat masala or amchur (1½ TSP), black salt (½ TSP), and salt to taste.
  6. Add besan (3 TBSP), and mix well until everything binds well and the flavors are evenly distributed.
  7. Take small portions of the mixture and shape them into round or oval kebabs. Lightly grease your palms with oil if needed.
  8. Heat a pan and drizzle a little oil.
  9. Keeping the flame on medium, place the kebabs on the pan and cook for 4–5 minutes. Flip carefully to avoid breaking and cook the other side for the same duration.
  10. Continue flipping until both sides turn golden brown and crisp. Add more oil if needed.
  11. Gently press the kebabs or cover the pan to ensure they cook through.
  12. Once done, transfer to a paper towel to absorb excess oil.
  13. Serve hot and enjoy.
