Leftover Rice Chilla: Waste Not, Taste More

Got some leftover cooked rice in the fridge? Don’t let it go to waste – turn it into something tasty! The Leftover Rice Chilla is soft, light, and flavorful, making it a good choice for breakfast, brunch, or evening snack. With a simple batter and everyday ingredients, you can cook up this satisfying dish in no time. Plus, it’s a smart way to repurpose leftovers while adding variety to your kitchen menu.

Ingredients

  • Cooked rice (any variety)
  • Flour (wheat or white)
  • Onion
  • Carrot
  • Capsicum
  • Green chili
  • Sesame seeds
  • Cumin seeds
  • Ginger-Garlic paste/powder
  • Turmeric powder
  • Vegetable Oil or ghee/butter
  • Coriander leaves
  • Salt

Instructions

  1. Firstly, prepare the batter.
  2. Take 1 cup of leftover rice (cooked) and mash it well in a bowl.
  3. Add 2 TBSP each of grated carrot, finely chopped onion, capsicum, green chilies, and coriander leaves.
  4. Mix in sesame seeds (1 TBSP), cumin seeds (½ TSP), ginger-garlic paste or powder (1 TSP), turmeric powder (¼ TSP), and salt to taste.
  5. Add 3 TBSP of flour (wheat or white) for binding.
  6. Gradually pour in 2–3 cups of water while stirring continuously to form a thick, soft batter with a slightly textured consistency.
  7. Heat a pan and grease it with oil or ghee.
  8. With flame on low, pour a ladleful of batter onto the pan. Since the batter is thick and textured, it won’t spread too thin—however, you can try adjusting the size, and shape as desired.
  9. Cover and cook for about 5 minutes, allowing it to set and develop a golden crust.
  10. Flip carefully, cover, and cook the other side for another few minutes.
  11. Continue flipping and gently pressing until both sides turn golden brown, crisp, and fully cooked.
  12. Remove from the pan and serve hot.

Serving Suggestions

  • Enhance the taste by mixing in shredded cabbage, chopped tomatoes, or any veggies of your choice.
  • For a more filling chilla, add crumbled paneer or any soaked lentils to the batter.
  • Make it more spicy by adding red chili powder, black pepper powder, garam masala powder, chat masala powder or chopped green chilies.
  • Serve it with chutneys or dips, warm chai or cool lassi.
