Besan Paneer Sandwich: Soft, Scrumptious and Satisfying

Ingredients

  • Slices of Bread (white/brown/whole wheat/multigrain)
  • Veggies (Onion, Capsicum, Tomato, Carrot)
  • Besan (chickpea flour)
  • Cheese (optional)
  • Paneer
  • Curd
  • Amchur powder/Chat masala powder
  • Garam masala powder
  • Black pepper powder
  • Turmeric powder
  • Red chili powder
  • Cumin powder
  • Red chili flakes
  • Coriander leaves
  • Green chillies
  • Cumin seeds
  • Carom seeds
  • Sesame seeds
  • Coriander chutney
  • Tomato ketchup
  • Butter/Vegetable Oil
  • Salt

Instructions

  1. In a mixing bowl, whisk besan (1 cup), and curd (¼ cup) to form a smooth, lump-free batter. Slowly add water to adjust consistency.
  2. Add turmeric powder (¼ TSP), red chili powder (1 TSP), red chili flakes (1 TSP), garam masala powder (¼ TSP), cumin powder (½ TSP), carom seeds (1 TSP), sesame seeds (2 TSP), and salt.
  3. Mix in the finely chopped onion, tomato, carrot, green chilli, and fresh coriander leaves. Let the batter rest for a few minutes.
  4. In another bowl, combine crumbled/grated paneer (50 g), finely chopped capsicum & onion, black pepper powder (½ TSP), amchur powder/chat masala powder (1 TSP), and salt.
  5. If you prefer a cheesy bite, mix in grated cheese (3 cubes).
  6. Heat a tawa (griddle) or pan and spread some butter or oil on it.
  7. Dip a bread slice into the besan batter, ensuring both sides are well-coated.
  8. Place the batter-coated slice on the hot tawa/pan and cook for 2-3 minutes per side, pressing gently until golden brown and slightly crispy. Repeat for the remaining bread slices.
  9. Spread the paneer filling evenly over a cooked slice. Place another cooked slice on top to form a sandwich.
  10. Cook the whole sandwich for 1-2 minutes more, pressing lightly.
  11. Repeat the process to make more sandwiches.
  12. Serve as a whole, or cut them into rectangular/triangular slices.

Serving Suggestions

  • Serve with green chutney or tomato ketchup. For enhanced taste, you can spread the chutney and ketchup on the bread slices before adding the paneer filling.
  • You can try any veggies of your choice.
  • Pair with masala chai for a cozy snack.
