Crispy Corn: Light, Spiced & Addictive!

Ingredients

  • Sweet corn
  • Cornflour
  • Rice flour
  • Maida (All purpose flour/white flour)
  • Ginger garlic paste
  • Black pepper powder
  • Chat masala powder
  • Red chili powder
  • Lemon juice
  • Vegetable Oil
  • Coriander leaves
  • Salt
  • Onion
  • Green chili

Instructions

  1. Boil the corn kernels for 3-4 minutes until slightly tender. Drain well and pat them completely dry.
  2. In a bowl, combine ginger-garlic paste (1 TSP), cornflour (3 TBSP), maida (2 TBSP), rice flour (1 TBSP), black pepper powder (¼ TSP), red chili powder (¼ TSP), chat masala powder (¼ TSP), and salt.
  3. Add the dried corn kernels to the bowl and toss well until they are evenly coated with the flour mixture. The coating should be light and dry, not sticky. Let it rest for 5 minutes, then pass through a sieve to remove any excess flour.
  4. Heat oil in a deep pan over medium-high heat. Once hot, carefully add the coated corn kernels in small batches.
  5. Deep fry for 3-4 minutes, stirring occasionally, until the corn kernels turn golden brown and crispy on the outside but remain to some extent tender on the inside. Be cautious, as corn kernels may pop in hot oil.
  6. Remove fried corn kernels with a slotted spoon and place them on a paper towel to absorb excess oil.
  7. In another pan, heat oil (1 TBSP). Sauté ginger-garlic paste (1 TSP), and finely chopped onions and capsicum until they turn slightly soft. Add chopped/slit green chillies to the pan, if you want.
  8. Add the fried corn to the pan. Season with red chili powder (¼ TSP), black pepper powder (¼ TSP), chat masala powder (¼ TSP), and salt. Toss well to coat everything evenly, then turn off the heat.
  9. Drizzle with 1 tsp lemon juice (1 TSP) and garnish with fresh coriander leaves for an extra burst of flavor.
  10. Serve hot.
